Whipped Feta Pepper Spread

1 pound Greek feta cheese (crumbled)

2 tablespoons extra-virgin olive oil + 3 tablespoons

1 red bell pepper, roasted, peeled, seeded, and coarsely chopped

2-3 fresh jalapeno peppers, seeded and minced

black pepper to taste

2 tablespoons fresh lemon juice

combine feta and 2 tablespoons of extra-virgin olive oil in a food processor. Pulse until feta is creamy then add bell pepper, jalapeno peppers, black pepper and pulse until mixter is well combined while gradually adding 3 tablespoons of extra virgin olive oil and lemon juice. The feta should be creamy and spreadable. Taste and add more olive oil and/or lemon juice if desired. serve with crackers or pita bread and enjoy!
