Texas Sheet Cake
2 cups granulated sugar
2cups sifted AP flour
1 tsp baking soda
1/2 tsp salt
2 sticks margarine
1 cup water
1/4 cup cocoa
1/2 buttermilk
2 eggs, beaten
1 tsp vanilla
Icing
1 stick margarine
3 tablespoons cocoa
6 tablespoons milk
1 pound (1 box) confectioner’s sugar
1 tsp vanilla
1 cup chopped nuts (optional)
Sift together. sugar, flour, baking soda, and salt and set to aside. In a saucepan, combine margarine, water, and cocoa. Bring to a roiling boil, stirring constantly.
Add dry ingredients, mixing well. Stir in buttermilk, eggs, and vanilla. pour into greased 15x10 pan. Bake at 400 degrees fahrenheit for 30-35 minutes. While still warm, spread icing.
For icing, mix margarine, cocoa, and milk to a boil in a saucepan. Add sugar and vanilla and stir untill combined.
